Akvadük

Akvadük is a boutique establishment. The name is due to the aqueducts situated on the upper border of our land.

We have been planting and growing our olive trees one by one with love and care. In our belief this combination makes our trees very special and they thank us for the commitment by giving fruits of highest quality.

Our land's location and advantage..

The Akvadük land is at 250 mt above sea level. Our farm is located between the Kozak Forest and the Bergama dam, by the Egean Sea.

Our trees receive the necessary oxygen from the Kozak pine tree forest as well as iodine from the close sea – all very beneficial to the growth and health of our trees and their products.

How we take care of our trees..

With the help of contracted agricultural engineers, we, ourselves, are responsible for the growth and treatment of our olive trees. Following the ‘’Good Agriculture”’ procedure in our farm, we only use natural fertilizer without usage of any other chemicals at any part of the process.

Extra virgin olive oil acidity; from olive to olive oil…

During the olive collection process, olives should not touch the ground. If they do, the acidity will increase. Therefore, we collect our olives with our hands, collecting them in baskets. Within the same day all olives will be processed into olive oil – using the procedure of “cold pressing”. Keeping the temperature low while processing the olives ensures that the olive oil does not loose its minerals and vitamins. Afterwards, the olive oil is immediately filled in our chromium tanks. Keeping it in these tanks secures the high quality of the olive oil – and for a long period.

Before delivery, the olive oil has to stay for a minimum of 6-8 weeks in these chromium tanks. We call this the “resting” period. The pulp of the olive oil slowly sinks down to the bottom of the tanks. This way, we can remove the sunk pulp from the tanks and can provide our olive oil without using extra filters. The result is olive oil with only vitamins and minerals left.
